Born into a family of farmers, Mathieu Guibert grew up on this coast, surrounded by the land and the sea. His cuisine reflects this direct connection to the natural world: local ingredients, a respect for the seasons, and a desire to make flavor a simple and precise language.



Wine, the perfect symbiosis with the kitchen
At the table, wine plays a unique role. It extends the dining experience, reveals its nuances, and sometimes even shifts its balance. Since 2019, under the leadership of Steve Gellot, head sommelier, the wine cellar has established itself as one of the restaurant’s cornerstones. Together with Mathieu Guibert, who is very open-minded about wine, the pair works closely together to create pairings. Wine serves to highlight a texture, prolong a sensation, and create a resonance with the dish. The experience then unfolds through these subtle interactions and the ability to evolve the diner’s perception as the meal progresses.

Since 2011, Jérémie Bousseau has been creating the desserts at Maison Anne de Bretagne.
Each creation is the result of meticulous assembly, in which textures, temperatures, and flavors come together with precision. Whether centered on chocolate, seasonal fruits, or more unexpected combinations, his desserts reveal a distinctive style—rigorous in their construction yet generous in their flavors.
