The wine cellar has become one of the cornerstones of the company. It now houses more than 2,500 wines, many of which are from the local region. This collection has been built up over the years through direct relationships with winemakers.

This reputation wasn’t built overnight; it is deeply rooted in the restaurant’s history. From the very beginning, under the leadership of Michèle and Philippe Vételé, wine has been an integral part of the experience. A wine cellar began to take shape, with a focus on the winemakers and on ensuring harmony with the cuisine.

Steve Gellot, Head Sommelier

Since 2019, Steve Gellot has been building the Maison’s wine cellar based on his encounters with winemakers. Each cuvée described here is the result of an exchange, a visit to a vineyard, or a shared story. It is a dynamic selection, shaped in the field.

The Book of Cave

The Maison’s Cellar Book compiles the vintages selected by the sommeliers over the years. This book, comprising some sixty pages, traces the history of the selection process, from Michèle Vételé to Steve Gellot, including Adrien Lavorel—all of whom have been named Sommelier of the Year.
